Hey ya’ll!

With the Super Bowl right around the corner, I thought I’d pass along a recipe that my little brother taught me! I have no idea where he got it from (I’m guessing his girlfriend, Katie, or the back of the BBQ sauce bottle) but he shared it with me, promising a “super easy and good BBQ chicken dinner”. I whipped it up the other night, served it slider style and he was so right!

Baby Wayne’s Crock Pot BBQ Chicken Sliders






Ingredients:




4-6 chicken breasts
(can still be frozen!)
1 bottle of Sweet Baby Ray’s BBQ Sauce
(I used the Honey BBQ flavor because it’s what I had on hand)
1/4 cup vinegar
1 tsp red pepper flakes
1/4 cup brown sugar
(note: I’ll probably add a bit more brown sugar the next time around)
1 tsp garlic powder

Bonus: I had every single item in my pantry/freezer! I bet ya’ll will have most if not all if you dig around!

Method:
(so, so easy)

Mix BBQ sauce with vinegar, red pepper flakes, brown sugar and garlic powder

Toss chicken into the crock pot…frozen chicken breasts are ok!!

Pour sauce mixture over chicken

cook on low for 4-6 hours
(if you added the chicken while it was still frozen, the sauce will have gotten a bit more watery and the BBQ mixture will have somewhat separated from the water…give it a good mix halfway through cooking and you should be all set!)

Once cooked, shred chicken

Serve on sliders buns with extra sauce for topping

For entertaining I would put out a toppings spread that included:

BBQ sauces in lots of flavors, cheese, chopped onions, sliced pickles, pickled okra, coleslaw and jalepenos. I also think the chicken can be served hot or room temp…depending on personal preference.

Because this gem is cooked in the crock pot, this is the perfect dish for a football game! Nothing to worry about, nothing to fuss over, hardly any clean up, it can serve as many people as you need and is a crowd pleaser…toss out some chips and dip and some veggies (request guests bring desert!) and you’ve got quite a spread!
