Cookie Butter Brownies
I’ve missed cooking. Summer keeps me out of the kitchen but sometimes a craving takes over and I find myself standing in front of a hot oven, begging a batch of goodness to hurry up and bake. Yesterday’s craving can all be blamed on my sweet friend Lauren who recently made a batch of brownies laced with Cookie Butter that I just couldn’t get over. Justin was begging for a batch to call his own, so off I went to Trader Joe’s. I have to admit that these Cookie Butter Brownies may be my best recipe of all time, so I should just go ahead and hang up my apron.

Cookie Butter Brownies
Ingredients
4 eggs
1 cup sugar
1 cup brown sugar
2 sticks (1 cup) melted butter
1 1/4 cup cocoa powder
2 tsp vanilla extract
1/2 cup flour
1/2 tsp salt
1 cup chocolate chips
2 big spoonfuls of Cookie Butter
Method
Preheat oven to 300 degrees
grease an 8×8 or 9×9 pan 
In a stand mixer, mix eggs on medium speed
Once eggs are light yellow in color, add in both sugars and continue mixing at medium speed
Add melted butter, cocoa, salt, vanilla and flour
Mix until fully combined, making sure to scrape flour off of the sides of your bowl so that it can all be incorporated
Turn off mixer and fold in chocolate chips
Pour mix into pan and spread it evenly
drop small blobs of Cookie Butter all around the pan, gently blend in to the batter, using a fork
Bake 50 mins or until cooked through
